The easiest Vegan Oat-Bars on the planet :)

Today I would like to share with you another very simple recipe which is also free from nuts (trust me, otherwise I do a LOT of baking with nuts or nut-butter). It is perfect as a snack, when you quickly need to get your energy levels up since it contains quite a lot of natural sugars from dried fruit. Dangerously tasty!

For this I use:

150g regular oats (feel free to use glutenfree oats)

25g pumpkin seeds

25g flax seeds

50g raisins (make sure they are without additional sugar - some brands may add sugar in dried fruits as a preservative however in my opinion it is completely unnecessary since dried fruit already contains a lot of concentrated natural sugar within)

50g cranberries (go ahead and use other kind of dried fruit you like, just keep the recommended proportions right)

50g frozen mixture of berries (mine contains blueberries, cherries, raspberries etc - you need only little of this and preferably small pieces since this will make your dough juicy)

Now a mix which will combine all this goodness together is consisted of

50g of Agave syrup (you could use any liquid sweetener you like)

50g of melted coconut butter

Approximately 200ml any kind of plant-based milk (I use Alpro almond milk)

Ready, steady, go! Preheat your oven to 180 degrees Celsius and bake for about 20 min. Keep checking cause they get ready really fast! I have an old-fashioned gas oven and I bake it for 20 min on the gas mark 4. I use a regular cake tray to bake it in - spread the dough evenly and make it quite thin. Cut into pieces after cooling it down. Enjoy!
