One more Vegan, Paleo Toast Spread (Medjool dates, seeds and peanut butter)
So if you have seen and/or have tried out my Fig spread, you by now know that I am good at this :) Here you go - one more recipe. It tastes somewhat differently from the Fig-one since it contains dates. Otherwise I love the texture, the taste, which is slightly caramel-like and also a bit salty. I used:
10 dried Medjool dates - you can use the fresh ones of course. I recommend soaking them in boiled water for at least 20 min so it releases it's flavor and aroma.
20 g pumpkin seeds
20 g sunflower seeds
10 g flax seeds
10 g sesame seeds
A pinch of sea salt
Now you need to roast your seeds in a pan for a few minutes. Not too long, I'd say about 3-4 min. Mix while roasting. Flax seeds will be done first - they start literally jumping out of the pan. Not to worry, it is a sign they are done :)
Once you've roasted your seeds, mill them with any kind of blender or mixer you have at home. Then do the same with your dates. Then combine them together, and add 1 big spoon of sugar free peanut butter. Add some water which is left from the drained dates, it will contribute to the flavor. You might add some Maple syrup or Agave syrup, if you think the spread won't be sweet enough for your taste.
You might combine any seeds or even nuts you have - it is all about experimenting. Certain seeds have more of a bitter taste once you mill them (pumpkin seeds, flax seeds) so it's all about the proportions.
