Low-carb Apple Shortbread

How can you enjoy some cake-like or pie-like piece without eating stuff made out of wheat, full of sugar and other crap? Well, you sure can, but it's definitely an art by coming up with stuff like that. It's all about experimenting and creating healthy recipes that are good for you. It's not an easy task, but doable. Lucky you, you have me. Or my recipes. When I first started eating mostly gluten free and sugar free for about 3 years ago, the first months I was literally dying out of cravings. I wanted to be buried in a pile of cakes, pies, muffins and chocolate. That's sugar dependency right there for you, people. We will talk more about it in my upcoming posts. Anyhow, discovering how to bake without regular flour and sugar has literally saved my life and contributed to the fact that I have gone 4 sizes down. I will probably always remain a sweet tooth. So whenever I have a craving for sweet stuff, I bake something healthy and indulge.

This is my healthy, sugar free, gluten free, very low-carb apple shortbread recipe:

80 g almonds, ground

50 g coconut flour

30 g flax seeds, milled

1 big spoon of sugar free peanut butter

2 tbs coconut oil

1 tbs homemade ghee butter (you could use coconut oil. I like using just a little bit of ghee butter because it gives a special taste to it)

Some Stevia sweetener

1-2 apples

200 g Cottage cheese

Any other topping you like


You will need to mix your ground almonds, milled seeds and coconut flour together with your melted coconut oil, butter and peanut butter.

Spread the dough evenly on a baking tray with some baking paper on. Bake for 10 min in a preheated oven of 180 degrees C/gas Mark 4. Take it out and leave the oven on for now.

Put your previously cut apple or cottage cheese on top. Put back to the oven and bake for at least 10 min more.

I would recommend adding cinnamon to your apple mix.

Done!

You could be using any type of toping of your choice. For example, pears, pineapple, berries...etc. It is up to you. The key to keep it healthy is skipping sugar and adding low-carb toping.
