Homemade Nutty Granola-Energy Kick (Vegan)

Just provide me with the ingredients and I am ready to provide, perform, create and deliver! So you know when kids go through an intense growing phase and they are in constant need of crunching on things/consuming food and snacks? My 11 year old is in that phase and I need to make sure he doesn't snack on worthless crap. So I made this Granola. It is oats and nuts based, refined sugar free, dairy free.

I used:

150 g regular oats (you may use gluten free if you like)

30 g buckwheat flakes

20 oat flakes (these concentrated flakes are both sources of vitamins and minerals, I try to include them wherever I can)

The rest of the ingredients is more or less up to your imagination! For this particular granola I added:

30 g pumpkin seeds

20 g flax seeds (gotta add these vitamins and minerals)

10 g chia seeds

10 g sesame seeds

20 g peanuts

10 g almonds

10 g shredded coconut

50 ml Agave syrup (you may use Maple syrup, even more nutritious)

3 tbs melted coconut oil

1 tbs peanut butter (melt it along with the coconut oil)

Some cinnamon

A pinch of salt

Chocolate chips (optional)

Happily mix all the ingredients together, spread evenly on a baking tray on a baking paper and bake for up to 20 min in a preheated oven. Oven temperature must be at least 180 degrees Celsius/Gas Mark 4 but after 10 min I decreased the temperature since it was baking really fast. Make sure to check on it and stir it a few times.

Done, finito, basta! Serve with plant based milk, dried fruit or whatever you like. I like spraying some granola on my plant-based yogurt to make it more crunchy. Basically you can use it anywhere you like and top your other kind of snacks with it.
