Gluten free, Sugar free Buckwheat Granola

So I love buckwheat due to many reasons - first off, it's completely gluten free, since actually it is in fact not grain or wheat, it is a plant. Since it is not wheat, it contains no gluten whatsoever, and this is a very strong reason to respect it for. Not only it's a perfect complex carbohydrate (and we do know that complex carbohydrates are the most important building material for our body cells), it is also incredibly nutritious: it contains a lot of fiber, protein, Magnesium, Iron, Copper & other necessary vitamins and minerals. It is highly recommended in diabetic condition as buckwheat has the ability to keep the lower blood sugar (clinically proved). Considering all this, you might want to include it in your diet. Here goes my granola recipe:
2 dl buckwheat of premium quality - you will need to soak it in water beforehand, for approximately 30-40 min.
1 dl pumpkin seeds
1 dl flax seeds
0,5 dl sesame seeds
0,5 dl shredded coconut
1 dl sunflower seeds
2 tbs of coconut oil
1 tbs sugar free peanut butter (I like Swedish brand Kung Markatta)
Don't worry if you don't have all the seeds I have mentioned - you can use whichever you like, just keep the proportions right.
Preheat your oven to approximately 120 degrees Celsius / Gas Mark 3, spread your mixture evenly on a baking tray quite thin and bake for approximately 60 min. Don't forget to check on it and stir it once in a while.
And you are done!
